Hot Pickles Hollandaise

Enjoy this hollandaise sauce over hot, sweet pickles and enjoy. Hot Pickles Hollandaise offers a sweet flavor from pickles and the lemon juice only to surprise you with a dash of cayenne. Good for any occasion.

2 cups Nalley® sweet pickles
dash cayenne
1/2 cup melted butter or margarine
1/2 cup Nalley® sweet pickle juice
2 egg yolks
1 tablespoon lemon juice
1/4 teaspoon salt

Heat pickles in pickle juice. Drain. Meanwhile, beat egg yolks with rotary beater or electric mixer until thick and lemon-colored then add salt and cayenne. Add 1/4 cup melted butter or margarine, about 1 teaspoon at a time, beating constantly. Combine remaining 1/4 cup butter or margarine with lemon juice. Slowly add this mixture, about 2 teaspoons at a time, to yolk mixture, beating constantly. Serve immediately over hot drained pickles.

Makes about 3 cups.
