Pack your flounder fillets with a variety of flavors including the definitive sweet taste of a pickle. Pickle Stuffed Flounder Rolls is a great dinner recipe the whole family will enjoy.

1 ½ pounds flounder fillets
¾ cup fine dry bread crumbs
1/3 cup Nalley® sweet pickles finely chopped
1 small onion, chopped
1 teaspoon chopped parsley
3 to 4 tablespoons Nalley® sweet pickle liquid
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons melted butter or margarine

Mix together bread crumbs, pickles, onions, parsley, salt, pepper and pickle liquid. Brush fillets with melted butter and place 2 tablespoons mix on each. Roll up and secure with toothpicks. Bake fish at 400° for 25 to 30 minutes, basting occasionally with pickle sauce.

Pickle sauce:
In saucepan, stir together 2 teaspoons cornstarch, 1 cup water, ¼ cup chopped sweet mixed pickles, 1 tablespoon butter or margarine, 1 teaspoon grated lemon peel, 1 tablespoon lemon juice. Cook and stir over low heat until mix thickens and boils, about 1 minute.
