Description
Spice up potato salad with this homemade recipe that features the sweet pickle taste and the classic potato salad flavors.

Ingredients
2 pounds boiling potatoes
1/3 cup salad oil
1/4 cup Nalley® sweet pickle juice
1 ¼ teaspoons salt
1/8 teaspoon pepper
1/3 cup chopped onion
1 cup Nalley® sweet relish
2/3 cup chopped celery
2 chilled hard-cooked eggs, chopped
1/2 cup mayonnaise
lettuce

Directions
Cook potatoes in boiling salted water until tender. Drain: peel and slice potatoes while still warm. Blend oil, pickle juice, seasonings and onion in large bowl; add potatoes, onions and relish, toss lightly. Chill for several hours. About 1 hour before serving time add celery, eggs and mayonnaise. Toss lightly and chill again. At serving time, pile potato salad into a lettuce lined dish.

Makes about 5 cups.
